Working on Clean Eating

This started off as "As the month draws to an end" bit now January has come and gone & well so has February. I've realized how much I enjoy being in the kitchen. After accomplishing a successful Family Christmas Dinner I felt more confident about my cooking and being in the kitchen. My sister got me the 5 Ingredients book by Jamie Oliver. Love. The recipes are super easy. Cooking for my family is my new zen. There is a certain sense of calm I feel when I'm left alone. It's truly a new art that I'm discovering in each meal I create.

I followed up Christmas Dinner with Super Bowl food while doing #Whole30 @Whole30. I didn't think I would be able to do favorites such as chicken wings & fries. But with some support from family I was able to do baked crispy chicken wings and buffalo cauliflower bites. Added to that I also made chilli. Mind you everything was all compliant to Whole30 for those that may read this and ask how is it possible. Guess what folks it is entirely possible. I found all the recipes online on approved sites.

By far this has been a hard challenge but a rewarding one. I've learned that my body tolerance for dairy has definitely reduce and I have to be more cautious. But then the flip is all the amazing meals I can create with simple ingredients.

Made a coconut milk chicken curry with baked sweet potatoes & asparagus. I was surprised by the easiness in preparing. My family was definitely impressed and requested I consider using shrimp instead of chicken next time.

Another quick and easy was shrimp and vegetables. I used a full pod of garlic and bacon fat threw some onions to saute it up and before you know it another dinner/lunch item was created. The most rewarding out of all of this has been that my family gives me their opinion even if its brutally honest. No sugar coating.
