I felt like Jerk

sometimes trial and error is necessary in order to achieve that specific balance of flavor, texture and color. this was not the case. my spice was lacking and the color not quiet that certain shade of deep dark brown in the gravy. but my family was encouraging in helping me identify the missing flavor profile. note to self not everything can be cooked in a slow cooker.

to accompany the chicken i went all out balls out. did rice and peas with plantain. the rice was a bit soggy but that was due to me not draining out the "peas". plantain was alright as I cut the slices too thick. next on the list is to make oxtail in the slow cooker.
